To tell you the truth I was never sold on the idea of tofu scramble before... but doing veganuary I knew I had to try it. And boy am I glad I did, because it is SO good! I felt like I was eating at a vegan cafe with this meal, it hit allll the right spots. It’s so simple too, it’d be silly for me to type up a proper recipe! Simply crumble tofu in a bowl, combine with turmeric, garlic powder, salt and pepper, then cook in some oil for 5 minutes or so. Towards the end, add some parsley and cook for 2 more minutes. I like using turmeric because it gives the scramble a yellow colour that resembles scrambled eggs, but you can get creative and use whatever you think would taste good.
